Wine Storage 101: Climate Control

You don’t want to store wine at room temperature or warmer for an extended period of time; not only will the wine age too quickly, it will likely lose flavor and aroma.  

Actively cooled wine storage utilizes cooling units and insulation to control the conditions of the environment. It is, in essence, an area with its own private air conditioner. It is necessary to include proper insulation, a vapor barrier, and a cooling unit that is sized appropriately for the space when constructing your storage in order to best maintain consistent temperatures and humidity levels. Large fluctuations in these conditions are the number one enemy of wine quality!

Different types of wine require different ranges of temperature.

If you plan to build your collection around one type of wine only, then focusing on the needs of the other is unnecessary. If you are collecting both red and white wines, 55 degrees F is generally the recommended temperature that will meet the needs of both types of wine. Some people opt to store white wines in a kitchen refrigerator. However, a standard refrigerator is substantially cooler than a wine refrigerator and white wines stored in one for an extended period of time will be at risk of tasting flat and flavorless.

Humidity is another environmental factor that can negatively affect your wine. The ideal humidity range in wine storage is 50 to 70 percent. A humidity level in this range will allow the moisture to remain inside the wine bottle instead of working its way into the cork and eventually evaporating.
