b'BROWN SUGAR CHRISTMAS COOKIES1. Preheat oven to 350 and spray baking sheet with cooking spray.1 1/2 c brown sugar 1 tsp cinnamon 2. Cream together sugar and shortening until light and fluffy.2/3 c shortening 1/2 tsp cloves 3. Beat in eggs, milk, and orange zest.2 eggs 1/4 tsp salt2 Tbsp milk 2 c flour 4. Stir together baking powder, spices, salt, and flour. Add to sugar mixture and 1 Tbsp orange zest 1 c raisins mix well. Stir in raisins.2 tsp baking powder5. Quick chill in freezer for 20 minutes to make dough easier to work with.6. Drop dough by teaspoonfuls onto prepared baking sheet.7. Bake for 10-12 minutes, or until done. Remove from baking sheets and cool on wire rack. Store in airtight container.Makes 4 dozenPOTATO LATKES 1. Peel and quarter potatoes. Boil until tender about 25 minutes. Drain and let cool 10-15 minutes. Mash well.3 medium potatoes1/4 c onion, finely chopped 2. Measure out 2 cups of mashed potatoes into a large bowl. Stir in remaining ingredients.1/2 c flour or matzah meal 3. Preheat griddle on medium heat. Coat griddle with cooking spray.1/4 c egg or egg substitute 4. Shape into 5-inch pancakes, place on hot griddle, and cook for approximately 5 minutes Pinch of pepper until browned. Turn pancake over and cook the other side for 5 minutes. Serve with 1/8 tsp salt applesauce or sour cream if desired. Makes 8 pancakesHOMEMADE APPLESAUCE3 lbs apples, cored and sliced 1. Place the sliced apples, water, and cinnamon in a 1/2 c water large pot set over medium heat. Cover and cook for 1/2 tsp ground cinnamon 15-20 minutes or until apples are tender.2. Use an immersion blender to puree the apples until desired texture.
